BIRMINGHAM, Ala. (WBRC) - A great recipe for cooler weather and a cozy night in.
Ingredients:
- ½ pound cooked elbow macaroni noodles
- 1 tablespoon olive oil
- 1 small yellow onion diced
- 2 garlic cloves minced
- 1 pound lean ground beef
- 1 10 oz can RO-TEL diced tomatoes and green chiles drained
- ⅓ cup heavy cream
- 1½ tablespoons sour cream
- 2 to 3 tablespoons chili seasoning
- 2 cups shredded sharp cheddar cheese divided
- Salt & pepper to taste

Instructions:
- Preheat oven to 375°F.
- Heat olive oil in a large oven-safe skillet over medium heat. Add onion and cook for 3 to 4 minutes, or until softened. Add garlic and cook for 30 seconds. Add ground beef and cook for 6 to 8 minutes, breaking it apart as it cooks, until completely browned. Carefully drain the excess grease.
- Reduce heat to medium-low and add RO-TEL, heavy cream, sour cream, chili seasoning, and 1 cup cheddar cheese. Stir until the cheese melts and the mixture is creamy and well combined. Season with salt and black pepper to taste. Let simmer gently for 3 to 5 minutes.
- Add the cooked macaroni and stir until evenly coated. Sprinkle the remaining 1 cup cheddar cheese over the top. Bake uncovered for 10 to 15 minutes, or until hot and bubbly and the cheese is melted.
- For a golden finish, broil for 1 to 2 minutes, watching carefully.
- Let rest for about 5 minutes before serving.
