BIRMINGHAM, Ala. (WBRC) - It’s a scorching Fourth of July and what better way to cool off than with this festive treat! Nedra Moore from Creations Galore and More in Calera joined Good Day Alabama with her daughter to show Janice these delicious Red, White and Blue ice cream waffle sandwiches. Yum!

Red, White and Blue ice cream waffle sandwiches

Ingredients

For the waffles:

  • 2 cups of self-rising flour
  • 1/4 cup of granulated sugar
  • 2 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 3/4 cup of buttermilk
  • 1/3 cup of melted butter
  • 1/4 cup of vegetable oil
  • 2 small eggs, or 1 large egg
  • 1/4 cup of water
  • 2 tsp of vanilla
  • OPTIONAL: Red and blue food coloring

For assembly:

  • Vanilla ice cream, or you can do your favorite flavor
  • Red, white and blue sprinkles

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large mixing bowl, combine the self-rising flour, sugar, baking powder, baking soda, and salt.
  3. Add the buttermilk, melted butter, vegetable oil, eggs, and water. Stir just until the ingredients are well combined. Avoid overmixing.
  4. For a festive Fourth of July twist, divide the batter into three bowls. Leave one portion plain, tint one portion red, and tint the other blue with food coloring.
  5. Spoon the three colors of batter into the waffle maker, placing them side by side without stirring together. Close the lid and cook until the waffles are lightly golden and slightly crisp.
  6. Transfer the waffles to a wire rack or tray and allow them to cool completely.
  7. Once cooled, cut or separate the waffles into sandwich-sized portions. Place a scoop of ice cream between two waffle pieces to create a sandwich.
  8. Gently roll the exposed edges of the ice cream in the red, white, and blue sprinkles.
  9. Serve immediately, or wrap individually and freeze until ready to enjoy.

Bakery tip

For the best texture, let the ice cream soften for a few minutes before assembling the sandwiches. This makes them easier to spread and creates a neater, more even layer.
