Chase Lake Café Turkey Saltimbocca

4 turkey breast cutlets,pounded

4 slices ham or proscuitto

1 Tbsp olive oil

1 Tbsp butter

1 clove garlic

2 Tbsp sage

Pinch of salt and pepper

1/2 cup marsala or wine of choice

1 Tbsp lemon juice

Heat olive oil and butter in pan.After pounding turkey out,place ham and sage into cutlet.Roll and stick with toothpick.Cook for about 2-3 minutes on each side until brown .Deglaze pan with lemon juice and marsala.This is a great dish and very versatile.Easy to make"saltimbocca " means jump into the mouth.Happy Holidays!!!
