Pan Seared Halibut

2- 6-8 oz Halibut Fillets

1/4 c. whole grain or creole mustard

1/8 c. dry white wine

sea salt & black pepper to taste

lemon butter

Mix wine, mustard & thyme in bowl.  Coat halibut, set aside for 15 min.  Season with salt & pepper then coat with bread crumbs.  Sear in hot pan until golden brown on each side.  Finish in 350 degree oven until fish is fully cooked. Let cool 5 min.  Drizzle w/ lemon butter & serve

Cherry tomato & red onion salad

1 - pint cherry tomatoes

1/2 small red onion sliced thin

4- fresh basil leaves chopped

1/4 c. balsamic vinegar

1/2 c. salad oil

sea salt

black pepper

Combine all ingredients & mix well
