Ingredients
2 small tomatoes - diced
1 clove garlic - minced
1 green onion - sliced thin
8 oz. canned low sodium white beans (Cannellini) - drained and rinsed
2 Tbs. Basil - fresh chopped
1 tbs. Balsamic Vinegar
2 tbs. Olive Oil
1/8 tsp. black pepper
1/2 cup low-moisture, part-skim mozzarella
4-6 cups mixed greens or arugula
Directions
Combine all ingredients except salad greens and marinate 5-10 minutes.
Toss with salad greens and serve chilled.
