St. Elias Lebanese Food & Culture Festival: Tabouli

Ingredients:

1/2 to 3/4 cup Bulgar Wheat

4 bunches parsley, washed, stemmed and chopped

3 to 6 large tomatoes, chopped

1 to 2 bunches green onions, chopped - or 1 medium onion, chopped fine

1/2 to 1 cup lemon juice

1/2 cup fresh mint, chopped or 1/4 cup dried mint

1/4 cup vegetable or olive oil

salt and pepper to taste

Directions:

Wash wheat and place in a bowl. Cover wheat with water and soak for 30 minutes or until soft. Combine all fresh ingredients and herbs in a large salad bowl. When wheat is soft, drain and squeeze water from it. Add wheat to the salad. Pour in oil and lemon juice. Add salt and pepper to taste. Toss well and serve. Enjoy!
