8 - 10 slices of thinly sliced Duck Prosciutto
Hand full of spinach
2 oz of Parmesan
2 oz of Goat cheese
2 oz of Sautéed Oyster and Shiitake Mushrooms
2oz of Caramelized Onion
2oz Veal Demi Glace
1 Garlic Clove
1 cup of Olive Oil
1 pizza crust or dough
Duck bacon preparation - takes about 2.5 hours
1 Gal Warm Water
3/4 cup Kosher Salt
2/3 Cup Sugar
3/4 Cup Apple Cider Vin
1/4 Cup Olive Oil
Mix all the ingredients well. In a dish, lay out your duck breast. Completely cover with mixture then cover dish with plastic. Place in fridge for two hours. Remove the breast, sprinkle with salt and pepper and place them on the smoker for 30 min. When you remove the breast from the smoking, let it rest for 15 min then thinly slice the breast.
1 Clove of garlic
1 cup of olive oil
In a small oven safe dish, pour the oil over the garlic. Place in a preheated oven at 300 and bake for 45 min or until garlic is soft. Let the oil cool. Strain the garlic. Chop the garlic cloves and set aside.
Use your favorite pizza crust as base.
Drizzle the crust with the olive oil
Add a small amount of chopped garlic
Add caramelized onion
Add cheese blend
