Puree Onions, tomato sauce. Once the puree is made add the following spices to taste: Salt, Garam Marsala, Saffron, Red chili powder, and coconut powder.
Gram Masala is a mixture of cloves, cumin see, cardamom see, green cardamom, and Black Caren.
Once the tomato puree and spice mixture starts to boil, add the coconut cream - about a 1.5 cups. Stir constantly until the sauce starts to thicken.
Once the sauce thickens add in the chicken, which has already been marinated overnight and cooked in a clay oven - you can also just use baked chicken.
Serve with basmati rice.
