Classic Mississippi Mud Brownie Bites

1 {4-oz} unsweetened chocolate baking bar, chopped
3/4 cup butter, cut into pieces
2 cups sugar
2 eggs
1 tsp vanilla
1 cup ap flour
1/4 tsp kosher salt
1 cup miniature marshmallows
1/2 cup chopped toasted pecans


Preheat the oven to 350 degrees. 
Microwave the chocolate & butter in a large glass bowl on HIGH 1 to 1 1/2 minutes, whisking every 30 seconds until melted & smooth. 
Whisk in the sugar until combined. Stir in the eggs & the vanilla until smooth. Add the flour & the salt, blending just until combined. Portion the batter between 18 well-greased regular-sized muffin tins filling 3/4 full. Bake 21 to 23 minutes or until just set. Do not over bake. Loosen the edges & cool 20 minutes in the pans. Remove the brownies from the pans & place on a wire rack. Prepare the Classic Chocolate Frosting as directed. Drizzle a little of the frosting over the brownies, top with the marshmallows & sprinkle with the pecans, pressing lightly to adhere. Drizzle with the remaining frosting. If the frosting begins to thicken after drizzling the base of the brownies, beat in an additional teaspoon of milk with the electric hand mixer until smooth before proceeding. Cool completely.  

Classic Chocolate Frosting


2 Tbsp butter, cut into pieces
3 Tbsp cocoa powder, sifted
3 to 4 Tbsp whole milk
1 tsp vanilla extract
1 1/2 cups powdered sugar


Melt the butter in a 2-quart saucepan over Low heat. Whisk in the cocoa powder & the milk. 
Remove from the heat & whisk until thickened & smooth. Add the vanilla & 1 cup powdered sugar. 
Beat with an electric hand mixer until smooth. Beat in the remaining 1/2 cup powdered sugar until smooth. 
Add additional milk, if necessary, to thin the frosting. Use as directed.
