What's Shakin' Tuna Bacon


1 spring roll wrapper
2 ounces sushi rice
1 ounce kani stick

Rice Bun Directions

Lay out one double ply spring roll wrapper.
Place a layer of sushi rice on top ½" thick leaving 3" of spring roll wrap on each side
Add 1.5 pieces of kani, pulled apart, evenly on the rice
Fold the remaining sides in to enclose rice
Toast on a flat griddle or saute pan.

Filling Ingredients:

4 ounces yellowfin tuna saku
1 teaspoon cajun seasoning*
2 slices crisp bacon
1 tablespoon tomato, diced ¼" 
2 tablespoons spicy mayonnaise- Mayonnaise spiced with sriracha or sambal
jalapeño pepper, 4 slices
¼ cup Asian slaw- Thin sliced, baby bok choy, napa cabbage, shredded carrot, shredded kohlrabi, shredded cabbage and chopped cilantro
1 teaspoon ginger soy sauce
Iceberg lettuce, 3 leaves


Coat tuna steak with cajun seasoning
Sear tuna, slice into 5 ¼" thin slices 
Top seared tuna with spicy mayonnaise and place on rice bun
Add 3 slices iceberg lettuce on top of tuna
Add tomato, jalapeño slices 1/8", slaw and ginger soy sauce and top with rice bun
