2 tablespoons extra-virgin olive oil, plus more for brushing
1 tablestpoon fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon freshly ground black pepper
1 teaspoon dried oregano
1/2 teaspoon dried dill
8 large grape leaves, blanched and dried
8 ounces feta cheese
vegetable oil for brushing grill grate
lemon wedges for serving
Preheat a gas grill or heat a grill pan over medium high heat in a small bowl, add olive oil, lemon juice, zest, pepper, oregano and dill. whisk.
Remove stems from grape leaves. Cut feta into rectangles: one inch thick by 2 inches long.
Place 1 leaf, smooth-side down on a work surface. place the piece of cheese in the center of the leaf.
Top with teaspoon of seasoned oil. Fold the leaf around the cheese and oil, bringing the bottom edge up first then a side followed by the top edge, and finally the remaining side. Brush leaf with olive oil and set aside, folded side down. repeat with remaining ingredients.
Lightly coat the grill with vegetable oil, using a silicone brush and place leaf bundles, folded side down, on the grill. cook until grill marks develop, 1-2 min. flip over and cook 1-2 min more.
