4 cups Penne Pasta, Cooked
1 Vidalia or sweet onion, diced
1 red pepper, diced
1 yellow pepper, diced
1 orange pepper, diced
1/2 cup chopped cilantro
1/2 cup chopped green onions
1 cup Shredded Sharp Cheddar Cheese
For the Sauce:
1 8 oz. block cream cheese, softened in microwave, 1 minute covered with wet paper towel
1 cup mayo
1 cup sour cream or plain yogurt
½ teaspoon cayenne pepper
½ teaspoon cumin
½ teaspoon paprika
1 teaspoon Delicious Goodness Seasoning or Dry Ranch Dressing Mix
Sea Salt, to taste
White Pepper, to taste
Combine all the sauce ingredients in a bowl and whisk until incorporated and creamy.
In a separate bowl, combine all the salad ingredients, and pour the sauce mixture over the salad mixture, and gently combine.
Refrigerate for 4 hours or overnight.
