1 LG Black Beauty Eggplant (Sliced thick and placed on to drying rack, salted to extract the bitterness)
4 eggs (Beaten)
1 cup of Quinoa (grinded into a flour like meal)
Salt and Pepper to taste
1 cup of Parmesan cheese or my favorite Smoked Gouda
2 cups of Marinara Sauce
4 T of oil or more
In a large skillet, place oil in and bring to high heat. In a small bowl add the eggs, in another add the quinoa (season with salt and pepper).
Rinse off the eggplant, pat dry, place in egg wash, then in quinoa, press to make a coating, and then place in hot skillet.
Cook for 2-3 min on each side or until crispy. Turn heat down, spoon marinara sauce on top, then place a slice of Gouda or sprinkle favorite cheese.
Turn heat off, wait till cheese melts to serve. You can also place in an oven at 350 for 2 min till cheese is melted.
