Pork Boom Boom Enchiladas

½ cup vegetable broth
¼ cup water
¼ tsp salt
¼ tsp black pepper
¾ pound Green Chiles, roasted, diced 
2 ounces Tomatillos, quartered
1 ½ ounces Cilantro, rough chop
1 ounce Green Onions, 1" pieces
¾ ounce Serranos, minced 
½ ounce Lime Juice, fresh 
1 ¼ pound American Cheese, shredded
10 Corn Tortillas, warm 
1 ¼ pounds Pork, roasted, shredded 
Mixed Cheese as needed


1. Combine ingredients in a saucepan over medium-high heat
2. Using a food processor, purée green chiles, tomatillos, cilantro, green onions, serranos, and lime juice 
3. Add to saucepan, stirring well. Bring mixture to a slow boil 
4. Lower flame and slowly add cheese -stirring as needed to remove clumps and make sure it doesn't stick to bottom of pan. When cheese is fully mixed and melted, remove from heat 
5. To make enchiladas, fill a corn tortilla with 2 ounces of roasted, shredded pork. Roll up and place in a baking pan. Top with mixed cheese as needed. Warm in a hot oven for 4 minutes, until cheese is melted. Top with Boom Boom sauce
