Alaga Peach & Pork Skewers

1 ½ lb. pork loin, large dice

4 ea. Peaches, large dice 

½ cup red onion, large dice 

8 wooden skewers, soaked in water.

Place diced pork, peach and red onions in alternating pattern on skewer.

Marinade for 1 hour in citrus ginger marinade.

Citrus Ginger Marinade:

¼ cup Lime juice

¼ cup Orange juice

¼ cup Olive oil

1 tsp. Ginger, freshly grated

1 tsp. Garlic, freshly grated

1 tsp. Soy sauce

1 tsp. Oregano

¼ tsp. Nutmeg

¼ tsp. Black pepper 

Whisk all ingredients together. 

Alaga Peach Glaze:

1 cup diced peaches 

1 cup water 

2 tablespoon Apple cider vinegar 

2 tablespoon Alaga Cane Syrup

1 tablespoon ginger fresh, peeled and minced 

1 tablespoon garlic, fresh, peeled and minced

1 tablespoon parsley, freshly chopped

1 teaspoon jalapeño pepper, small diced


Combine all ingredients except fresh herbs; In a saucepan over medium heat. Simmer and reduce by 1/3 – approximately 5-7 minutes. Remove from heat, add freshly chopped herbs.  Adjust seasoning with salt and pepper.
