Cracklin' Crusted Red Snapper

Snapper Fillet 
1 cup Creole Seasoning 
1 cup crushed pork skins 
2 cups brown butter 
3 oz Lobster meat 
½ cup Chives 


Season snapper with Creole seasoning and place in skillet on medium high heat, flip and finish cooking. Heat brown butter and slow poach lobster meat. Place fish on plate and top with pork skins. Add lobster and finish with chives
