New York strip with couscous

New York strip with couscous

1 ea. Strip Steak, 14 oz. 

as needed Steak Seasoning

as needed Blended Oil

as needed Olive Oil Spray 

2 oz. spoonful Zucchini, grilled

2 oz. spoonful grape tomatoes, halved 

2 oz. spoonful Red Onions, grilled

1 oz. spoonful Couscous, blanched

1 Tbsp. Feta 

½ ea. portion Kale, marinated 

1 oz. ladle Roasted Green Chile Vinaigrette

¼ tsp. Salt and Pepper Mix 

1 oz. ladle Roasted Green Chile Vinaigrette

1 pinch Sea Salt 

1 pinch Feta

Method: 

Dredge steak in steak seasoning on all sides. 

Pat off excess and dip into oil.

Broil steak until desired doneness.

Allow steak to rest. 

Spray a non-stick pan with olive oil spray. 

Add zucchini, grape tomatoes, red onion and couscous, sauté and heat through. 

Add Feta, kale, and vinaigrette, toss to combine.

Season with salt and pepper. 

On a large platter, ladle vinaigrette around the plate.

Place couscous on the left.

Cut steak into ½" thick slices and shingle next to salad on the right.

Garnish steak with sea salt.

Garnish entire plate with a pinch of Feta.
