2 11-ounce cans mandarin oranges
1 cup Dreamland BBQ sauce
6 Tablespoons of red wine vinegar
4 tablespoons of honey
1 12-ounce package fresh baby spinach
1 cup of walnuts toasted
1 cup of goat cheese
1 cup of dried cranberries
1 cup blueberries
Step 1. Drain oranges, reserving the cup liquid. Set oranges aside.
Step 2. Combine 1/2 cup orange liquid, barbecue sauce, and next 3 ingredients in a small bowl, whisking until blended.
Step 3. Place spinach on a large platter or in a large bowl. Sprinkle with reserved orange segments, dried cranberries, blueberries, walnuts, and crumbled cheese. Serve with barbecue vinaigrette.
Serve immediately. Yield: 10 - 12 servings
Note: vinaigrette may also be used as a marinade for meats or poultry.
