Sweet Corn Pudding

2 cups cream
1 cup corn, preferably fresh
1 chopped shallot
3 teaspons cornstarch
3 teaspoons water, mixed with cornstarch
1/4 teaspoon salt
1 tablespoon butter
Fresh chopped herbs if desired


In a medium saucepan over medium heat, melt butter and add shallots, stirring until softened.  Add corn and cream, heat until bubbles form at edges. In a bowl, combine cornstarch, water, and salt. Pour into hot cream, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving. Serve on own as a side dish or garnish with pickled shrimp, asparagus and other spring vegetables as an appetizer or tapas.
