Angela's Caramelized Onion and Parmesan Cheese Quiche

2 cups of High Gluten Flour
2 sticks of soft butter
2 teaspoons of kosher salt
2 teaspoons of sugar
1 tablespoon of fresh dill
1 tablespoon of fresh Thyme
16 tablespoons of ice water


In a bowl combine dry ingredients and herbs, crumble butter until incorporated. Then make a well in the middle of flour. Add water 4 tablespoons at a time. Mix dough with your hand until you form a ball. Let sit in fridge for two hours then roll out and cut with four-inch round cutter. Place in muffin tin, sprayed with cooking spray. Set in freezer until hard.

Quiche Mix

2 eggs
1 cup of heavy whipping cream
1 onion, julienned
1 teaspoon of salt
2 tablespoons of oil
4 tablespoons of parmesan cheese


In a small bowl, add cream, eggs, and salt. Mix together. In a small skillet, add oil and onion and pinch of salt. Let cooking medium heat for 30 minutes. Keep stirring with wooden spoon until caramelization occurs. 
Place cheese in bottom of dough cups. Pour quiche mix on top. Shake down to get the bubbles out and fill more if necessary. Put the oven in the pan and bake at 375 for 10 minutes. Check your pain by shaking it. (If it wiggles, leave it in a little longer. If it's solid, it's ready! You can boost the heat a bit to make a crust on top.)
