1 cup butter, softened
1 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
2 2/3 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely crushed pretzels
1 cup toffee bits
Preheat oven to 325°F. Line baking sheets with parchment paper.
Beat butter and sugars in electric mixer at medium speed until creamy. Add egg and vanilla, beating until blended.
Combine flour, baking soda and salt in a small bowl. Gradually add to butter mixture, beating until just until combined. Stir in pretzels and toffee bits. Drop by heaping tablespoonfuls onto prepared baking sheets.
Bake at 325°F for 14 to 16 minutes or until slightly browned and set around edges. Let cool on baking sheets 1 to 2 minutes. Remove to wire racks, and cool completely.
