1lb of Pork Sausage - Raw and Ground
1 Bell epper - Diced
½ of a Red Onion - Diced
1 Med. sized Tomato - Diced
1 Jalapeño - Diced and seeded
3 Med-Lg Yellow Squash - Cut in half and Scoop out
3 T of Oil
1 t of Chipotle Chili Powder
1T of Turmeric
1 t of Coriander
Salt and Pepper to taste
½ cup of Mottz-Provolone Cheese
On a small sheet pan, place squash inside up, spray with oil and salt and pepper and bake at 350 for 10 min. Set aside for later. In a med.-lg. skillet, bring oil to smoking point and cook off pork sausage for 2-3 minutes not all the way cooked. To where there is still some pink parts. In a separate skillet, place oil, onions, peppers, jalapeno, tomato, chili powder, turmeric, coriander, and salt and pepper. Cook till tender or as you like. Add to pork and with a small ice cream scoop, portion the mixture in the squash shells, top with cheese, place in oven at 350 degrees and bake of 5 minutes or until cheese is melted.
