Thai Chicken Quesadillas With Fresh Peaches
makes 4 servings

Toss the diced peaches in a bit of fresh lime juice to preserve the bright color.

1/2 cup Dixie Pesto
2 {9.2-oz} packages flour tortillas
1 {8-oz} package shredded Cheddar-Monterey Jack cheese blend
2 cups shredded rotisserie chicken
Cooking spray
Toppings: Diced fresh peaches, sliced scallions & roasted peanuts

Spread 1 tablespoon Dixie Pesto over 8 flour tortillas.
Layer each tortilla evenly with 1/4 cup cheese, 1/4 cup chicken
& an additional flour tortilla.

Cook the tortillas, in batches, in a lightly greased large non-stick skillet
over Medium heat 2 to 3 minutes per side or until golden brown.

before flipping the quesadillas,
coat the tortillas with a quick sweep of additional cooking spray

Cut into wedges.
Serve with desired toppings.

Dixie Pesto
makes about 3/4 cup

Expect a thick consistency, perfect for spreading onto flour tortillas or hearty bread slices. If tossing with pasta or spooning over salads, stir in a little additional oil, if desired.

1 cup {about 1.5-oz} packed fresh basil leaves, blanched
2/3 cup lightly salted roasted peanuts
2 Tbsp fresh lime juice
1 Tbsp canola oil
1 Tbsp honey
1 tsp soy sauce
1 garlic clove
1/2 tsp crushed red pepper flakes

Blend the basil, the peanuts, the lime juice, the oil, the honey,
the soy sauce, the garlic clove & the red pepper flakes in a food processor
until finely ground & relatively smooth, about 1 minute on High speed.
