The Mexicali

1.5 oz Tomatillo Salsa Base
4 oz Braised Lamb
 2oz Cheese Blend
2oz Pepper Jack Cheese
2 oz Queso Fresco
1 Thin sliced Jalapeno
1/4 cup Roasted Cherry Tomato
1/4  Small White Onion Thin Sliced
 
Drizzled with 2oz of Avocado Crema

** Tomatillow Salsa**
6 Tomatillos
1 Jalapeno
 Roast these two together until tender with a little color.
Let cool. Puree together adding salt and pepper to taste.

** Avocado Crema**
1 Avocado
1 Cup of  Sour Cream
1/4 Bunch of Cilantro
