DAK's BACON BRUSSEL SPROUT SALAD
DAK's is going to turn you into a Brussel sprout fan with this awesome recipe!!! You will love the contrast between the raw, crunchy Brussel Sprout - which doesn't even look like a Brussel Sprout, the rich smoky bacon and toasted almonds, topped with a citrus dressing. Brussel sprouts are getting a makeover with this delicious dish. This makes a great side to any grilled chicken, meat or fish.
1 large shallot, minced
½ cup olive oil
1 tablespoon of DAK's GREEN ZEST or ORIGINAL RED
6 slices cooked bacon, crumbled or chopped
4 dozen Brussel sprouts, fresh
1 cup toasted almonds
1 cup grated parmesan cheese
Cook and crumble the bacon.
Squeeze the juice of the lemon and orange into a large bowl with the shallots. Pour the oil into the bowl in a steady stream, whisking to form an emulsion - it should appear more creamy and less transparent. Add the DAK's GREEN ZEST OR ORIGINAL RED. Refrigerate until ready to use.
Using a mandolin, shave the Brussel sprouts not including the stems into thin slices to make a shredded/slaw texture.
Place the almonds in a food processor and pulse until chopped coarsely.
Add ¾ of the almonds, cheese, and bacon to the shredded Brussel sprouts; toss to combine. Refrigerate until ready to serve.
When ready to serve, toss with the dressing and sprinkle with remaining almonds, cheese, and bacon over the top. If needed, add a few more tablespoons of olive oil and toss.
