Quinoa Salad with Shrimp Kabobs

Quinoa Salad with Shrimp Kabobs
•    Cooked Quinoa
•    Tomatoes, Chopped
•    Cucumbers, Chopped
•    Celery, Diced
•    Green Onions, Chopped
•    Broccoli, Blanched or Raw
•    Feta, Crumbled
•    Olives, Pitted
•    Mixed Greens
•    Shrimp, Grilled
•    Zoës Kitchen Spice of Life Seasoning
•    Lemon Wedge

Dressing - Lemon Vinaigrette: 
•    Oil
•    Fresh lemon juice
•    Garlic
•    Pepper
•    Spices

Toss cooked quinoa with tomatoes, cucumbers, celery, broccoli, green onions, olives, and lemon vinaigrette. Top with feta, serve over a bed of greens. 
To prepare shrimp, sprinkle the shrimp with oil and seasoning - optional: Zoës Spice of Life, skewer, and grill for approximately three minutes on each side until cooked through. Serve on top of the salad and garnish with a lemon wedge, optional
