Potato chip cookies


2 sticks of soft butter

3/4 cup light brown sugar

3/4 cup sugar

1 tablespoon of vanilla

2 eggs

2 1/4 cup of gluten free flour (does not have to be gluten free)

1 teaspoon baking soda

3/4 tablespoon salt

4 cups crushed potato chips, setting aside 1/2 cup

1 cup chopped pecans


Mix all ingredients together. Scoop out a ball of dough and roll it in the remaining 1/2 cup of crushed potato chips. Press down to flatten on pan and bake at 375 degrees for about 8 minutes.
