Wendy Cruse's green tomato tarts
1 recipe pie dough - cut into 24 rounds
1/2 fine diced jalapenos
1/2 fine diced Vidalia onions
2 fine diced green tomatoes, medium sized
1/4 teaspoon black pepper
1/4 teaspoon salt
24 teaspoons Gouda cheese, diced or shredded
Place pie dough rounds in a mini muffin tin and push down. Put one teaspoon of cheese in the bottom of each shell. Mix tomatoes, onions, and peppers. Add salt and pepper. Let the mix stand for 20 minutes. Drain off the liquid and then spoon mix into the shells. Bake at 350 degrees for about 15 minutes.
