Angela's Collard Green and Blue Cheese Chiffre d'affaires
• 1 small bunch of collard greens (washed n chopped)
• ½ an onion (diced)
• 2 cloves of garlic (minced)
• ½ cup of cherry tomatoes (diced)
• 2 T of oil
• 2 T of blue cheese
• 2 puff pastry sheets size 4'x4'
• 1 egg
• 1 T of water
• Salt and pepper to taste
In a hot skillet, sauté onion and garlic in oil until onions are caramelized. Add fresh tomatoes and cook for 2 mins. Then add collards green and let them wilt. Salt and pepper to taste. On the puff pastry dough stuff the collard greens in the middle, don't add too much. Then, add blue cheese on top. Fold over puff pastry to each corner and press with a fork to close. Make sure all corners are closed and then in a separate bowl add egg and 1 T of water for egg washed. Beat egg and then lightly brush on top of pastry. Cook at 350 degrees for 12-15 min. check occasionally till pastry is cooked all the way. Serve for friends n family. Enjoy!
