All Around Town Catering Grilled Beef w/Chimichurri Sauce
1 lb Teres Major or chuck tender[Silverskin removed]
1 TBSP olive oil
1 Tbsp soy sauce
1 tsp Crazy Salt
Marinate beef in oil mixture.Grill 6 minutes on each side for medium rare.Let rest for about 8 minutes.Slice for medallions or strips for tacos.
2 TBSP olive oil
2 TBSP rice vinegar[Or white for less sweet]
1 /4 cup diced red onions
1/4 cup diced red peppers
1/4 cup cilantro
Lime juice optional
Combine all ingredients in bowl and stir them up really good.Spoon over beef or use with tacos.
