Sauteed chicken breast with shrimp cream sauce

Chef Donnell Johnson's Sauteed Chicken with a Shrimp Cream Sauce
Serves: 2


2 6 ounces boneless, skinless chicken breast halves
8-10 shrimp 41-60
2 cups fettuccini pasta cooked
1 clove garlic
1 tablespoon butter
1 cup chicken broth
1/4 cup heavy cream
1/2 teaspoon tomato paste
salt and pepper to taste
1/4 cup sweet red pepper
1/2 cup mushrooms
1 tablespoon olive oil
1 tablespoon vegetable oil


Place chicken breast on cutting board, begin pounding chicken gently between 2 pieces of plastic wrap. Season chicken with salt and pepper and dust in flour. Heat saute pan, add vegetable oil and place chicken in saute pan cook 3-5 on each side. Remove chicken from pan and place on plate.  Add butter onions, garlic, mushroom, shrimp to saute pan and saute for 1 -2 minutes. Season with salt and pepper add broth, cream and tomato paste. Cook for 2-3 minutes, add butter and remove pan from stove. Place fettuccini on a plate. Place chicken on top of noodles. Pour shrimp sauce over chicken. Garnish with red pepper and green onion.
