HEALTH DEPT - Sarah talked with Dr. Mark Wilson, head of the Jefferson County Health Department. The Jefferson County Department of Health promotes health through PARTNERSHIPS - how it partners with the community to move closer to our vision for a healthy community. The Health Department is leading a county-wide public health assessment and health improvement planning process. We are calling it "Community Matters 20/20". 20/20 has a double meaning: The Health Department is using a very thorough process to get as close to "20/20 vision" as it can in assessing the community and people's health there. And, the community health improvement plan is intended to go through the year 2020, when the Health Department will repeat the process. Over the next few months the Health Department will conduct a multi-faceted community health assessment:
- gather quantitative health data from various sources
- get individual residents' perspectives through surveys (planned for mid May) and meetings
- assess the "public health system" - the different organizations that contribute to public health
- get input on "forces of change" that might impact the future of public health.
Once all the data is compiled, the Health Department will use it to develop a Community Health Improvement Plan, again with broad input. To get involved or for more information, visit JCDH.org or call (205) 930-1493.
NUTRITION COOKING - Clare talked with Jessica Cox, Culinary Nutritionist from Emeals, who showed us hwo to make Garlic Shrimp with Blistered Tomatoes. This recipe got the highest mark in the test kitchen, and it comes together in just 15 minutes and has less than 500 calories per serving. To get started, she drizzled olive oil over grape tomatoes, added some salt and crushed red pepper, and broiled them in the over for about 4 minutes. This brings the tomatoes to their natural sweetness to make a rich sauce for the shrimp. She sauted the shrimp and garlic in olive oil for about three minutes. She combined the finished tomatoes and shrimp in a bowl with feta and fresh parsley to make a flavorful, healthy and low calorie recipe. It is part of the eMeals Low Calorie dinner plan with less than 500 calories per serving.
