Chicken Hash

Donnell Johnson's Chicken Hash

2 cups of  chicken breast diced
1/2 cup of celery
4 cups of potatoes diced cooked
1/2 teaspoon of garlic
1/4 cup of onions
1/4 cup of diced peppers
1/2 cup of broth
1/2 cup of cream
1 spring Thyme
1/2 teaspoon paprika
Salt and pepper to taste

Season chicken with salt, pepper, paprika and olive oil. Heat sauté pan and brown chicken for 5-6 minutes or until done, then remove chicken from pan and set aside. Using the same pan, add teaspoon of olive oil, celery, peppers and onions, sautéing for one minute then add potatoes and garlic and season with salt and pepper, sautéing for two minutes adding cooked chicken and thyme. Add cream and chicken stock, sautéing for 2-3 minutes. Then place in desired dish, preferably a bowl and top with cheese and bacon bits.
