Sicillian Pork Chops for Four
8 Pork Chops – Boneless
3 Green Peppers –Sliced Thin
1 Large Onion – Sliced Thin
½ Pound of Mushrooms
Extra Virgin Olive Oil
Mozzarella Cheese – Shredded
Season Pork Chops with Salt and Pepper to taste, dredge in flour. Place in a hot skillet with about ¼ cup Olive Oil, frying until done and brown on both sides.
In a separate skillet, sauté the thinly slices onions and peppers and mushrooms in about 3 or 4 teaspoons of Olive Oil, veggies should be fork tender.
When Pork Chops are done and brown on both sides, set aside, using another skillet put about ¼ cup of your Marinara sauce in the skillet. Add the pork chops, top with Marinara, the onions, peppers, mushrooms and top all with Mozzarella Cheese, bake about 10 minutes or until cheese is melted and a little brown.
