All Around Town Catering Crispy Pork Tacos w/ Pineapple Pico de Gallo
3/4 lb pork loin,sliced thin[Can be precooked or grilled for convenience]
1/4 cup pineapple juice
2 Tbsp lime juice
1 Tbsp Caribbean Jerk seasoning
2 Tbsp olive oil
Pico de gallo is a combination of whatever you want to combine,it is very versatile.We are using tomatoes,onions,jalapeno peppers,lime juice,cilantro,and pineapple chunks.
8 corn tortillas[We are using Milagro brand;they are really good]
Marinate pork in juices and seasoning.Heat oil in pan and add pork and basically stir fry it for about 3 minutes.Set aside,and heat oil for tortillas.Heat them for about 20 seconds and turn over.You just want to make them so they don't break when you fold to eat your taco.Spoon pork onto tortillas and top with your pico de gallo and cilantro.These are very tasty and easy to make.
