Wendy Cruse's Stuffed Chicken
Serves 4

4 pounded flat, marinated chicken breast (4oz each)
2 sauted leeks, white only
1/2 cup wild rice, cooked
1 tablespoon chopped parsley
1 egg
salt & pepper to taste
1/2 cup chicken broth
1/4 cup vermouth

Mix leeks, rice, parsley, egg, & salt & pepper. Flatten chicken and place rice mixture on it. Roll it up and pace on a buttered pan, seam side down. Add chicken broth and vermouth. Bake at 350 degrees for 30 minutes.
