Vegetable Beef, Broccoli, and Rice

Angela's Fit2Eat Vegetable Beef, Broccoli, and Rice

· 10 oz of Beef Shoulder (diced into ½ inch cubes)
· 1/2 cup of diced celery
· ½ cup of diced carrot
· 1 cup of onion diced
· 2 T of vegetable oil
· 1 cup of broccoli florets
· Salt & Pepper to taste
· 3 cups of raw spinach
· 1 clove of garlic (diced)
· 1 ½ cups of rice (cooked)
· 1-2 T of balsamic vinegar

In a sauté skillet with 1 T of oil, add onion, celery, carrot and garlic. Cook for 3-5 minutes on med. heat. Then, add broccoli florets, and spinach. Cook till spinach is wilts, and then add your cooked rice. Salt & Pepper to taste. Finish off with the balsamic vinegar. In a separate skillet, add the last T of oil and heat till the smoking point. Then, add your beef shoulder and cook till the desired temp of your choice. Med Rare is the best temp which will take less than 3 mins of cooking time. Serve rice and veggies on the bottom of the plate, and then finish off with the beef. Enjoy!!
