Cold weather often makes us crave comfort food. However, comfort food is often pretty heavy or fattening. I've lightened up some macaroni and cheese and even added some vegetables to it, to make it not only healthier, but also a bit better for you!
AIMEE FORTNEY'S QUICK AND EASY VEGGIE MAC AND CHEESE
Cook the pasta, then drain and reserve 1/4 cup of the pasta water. Place reduced fat cream cheese and cheddar cheese in a bowl. Microwave for about 45 seconds to one minute or until melted. Add the drained pasta and broccoli florets to the melted cheese and stir well. If this mixture is too thick, you can add the reserved pasta water to thin out the mixture, then just reheat.
