Angela's Fit 2 Eat Spicy Chicken and Vegetable Black Beans

· One 6-8oz portion of raw chicken breast
· 2/3 cup of black beans (cooked and drained)
· ¼ of onion (diced)
· 1 clove of garlic (diced)
· ½ cup of zucchini (sliced)
· ½ cup of squash (sliced)
· 1 roasted red pepper (sliced)
· 1 large pinch of cayenne pepper
· ½ t chili powder
· ½ t coriander
· 1 pinch of cinnamon
· 1 t cumin
· Salt to taste
· 2 T oil


Mix blend of spices together in small bowl. In skillet add 1 T oil to coat pan. Season chicken with spice blend and salt. When skillet is hot and to smoking point, place chicken on fat side first and sear on both sides. Then, place in oven at 350 degrees for 15-20 minutes, until internal temp is 160. Let rest for 5-10 minutes.  Have your black beans already prepared and drained. In same skillet, add onion and bell pepper and cook till onions are starting to caramelize. Then, add garlic, squash, and zucchini. Add a few pinches of spice blend and salt. Cook for 5-10 minutes or until the veggies are a little translucent. Serve and enjoy!!
