Earth Fare Red, White and Grilled Salmon
2 Tbs. Dijon mustard
3 Tbs. low-sodium soy sauce
6 Tbs. Earth Fare extra virgin olive oil
½ tsp. garlic, minced
Brush grilling rack with olive oil.
While the grill is heating, whisk together in a small bowl mustard, soy sauce, olive oil and garlic. Drizzle ½ of the mixture onto salmon and allow to sit for 10 minutes.
Place the salmon skin-side down on the hot grill. Grill for 4-5 minutes on each side, or until done.
Transfer to the plate skin-side down and spoon reserved marinate on top. Allow to rest for 10 minutes for best flavor.
No-Mayo Potato Salad
This recipe has only 6 ingredients and tastes great without all the extra mayo. Besides having less unhealthy fats, its added bonus provides 45% of the daily value of Vitamin C and is much lower sodium.
Guacamole Potato Salad
2 lbs. small red potatoes, cleaned and quartered
2 ripe, avocados, mashed
2 garlic cloves, minced
2 green onions, whites only, finely chopped
2 large Serrano pepper, seeded and minced
Salt to taste.
Bring water to a boil in a large pot. Add potatoes. Boil until tender. Test doneness with fork. Drain and place potatoes in a large bowl. Cover and refrigerate.
In a small bowl, mash avocadoes with a fork. Add to large bowl with the rest of the ingredients. Salt to taste and serve immediately.
Serving Suggestions: If making in advance, sprinkle generously with lemon juice and place a layer of plastic wrap or lid to seal.
