Bright Star's Italian Style Halibut
Fresh fillet of Halibut baked with Sliced Onions and Tomatoes served over pasta and marinara sauce topped with Parmesan Cheese
16 oz fettucini or spaghetti
¾ cup plus 1 tablespoon extra virgin olive oil
2 tablespoons fresh basil leaves
1 tablespoon minced garlic
3 tablespoons Cavender Greek Seasoning
1 tablespoon paprika
I medium purple onion, thinly sliced
2 ripe tomatoes, thinly sliced
4 halibut steaks or fillets
½ cup grated parmesan cheese
Prepare pasts according to directions on box.
Preheat oven to 375 degrees.
Create an Italian herb base by mixing together the olive oil, basil leaves, garlic, and 2 tablespoons of the Greek seasoning and paprika in a bowl. Place halibut fillets on a baking sheet pan and coat the halibut fillets with the herb mixture and set aside.
In a 9 x 9 lightly greased pyrex dish, place the onion and tomatoes. Combine 1 tablespoon olive oil and 1 tablespoon Greek Seasoning in a small bowl. Sprinkle this mixture over the onion and tomatoes.
Put halibut fillets in middle rack of oven and pyrex dish with vegetables on lower rack. Roast 12 minutes. Remove vegetables from lower rack and cover to keep warm. Bake halibut an additional 7 minutes until fish is opaque and knife slides in easily. Remove from heat.
