Salsa Senorita's Margarita Pie
2 cups of small pretzel twists
6 oz limeade frozen concentrate -slightly thawed
4 cups vanilla ice cream
1/2oz orange liqueur
1 tsp lime zest
Pie Crust - preheat oven to 375 degrees. In a food processor or blender process pretzels into crumbs. Add sugar and process. Add butter and mix well. While processing add 2 oz of the frozen limeade and mix well. Spoon mixture into an ungreased 9 inch pie plate. With the back of a spoon, spread the mixture firmly into the bottom and sides of pie plate. Bake crust for 5 minutes until set. Place pie crust in the freezer to cool completely.
Pie Filling - in a large mixing bowl, add ice cream, tequilla, orange liqueur and remaining frozen concentrate and mix well. Pour into cooled pie crust and sprinkle with lime zest. Place pie in freezer for two hours or until filling is firm. Makes 8 servings.
