Irondale Cafe's sweet potato souffle
3 lbs. sweet potatoes, washed, scrubbed
1/2 c butter, softened
1/2 c brown sugar
1/4 c granulated sugar
2 tsp. vanilla
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
Preheat oven to 350 degrees.
Bake sweet potatoes in preheated oven for 45 minutes to an hour, depending on size.
Allow potatoes to cool to the touch. Peel skins off of the potatoes.
Place potatoes in a mixing bowl, add all ingredients except marshmallows.
Mix with an electric mixer until smooth. Pour in a baking dish and bake at 350 degrees for 20 minutes or until hot. Remove from oven, and top with marshmallows, bake for five minutes or until the marshmallows are golden brown.
