CHEF CLAYTON SHERROD'S PEPPER CRUSTED TUNA STEAK ON BRAISED ROOT VEGETABLES & ORZO, RED PEPPER AIOLI

1 1/2 TSP SALT
1 TSP GROUND CORIANDER
1/2 TSP PAPRIKA
1/4 TSP CAYENNE PEPPER
4 (6 OZ) TUNA STEAKS
4 TBSP FRESH COARSELY GROUND BLACK PEPPER
2 TBSP OLIVE OIL
1 LEMON, QUARTERED

IN A SMALL BOWL, COMBINE THE SALT, CORIANDER, PAPRIKA, AND CAYENNE PEPPER. SPRING THE SPIC EMIXGTURE EVENLY ON BOTH SIDES. THEN COAT THE TUNA STEAKS ON BOTH SIDES WITH BLACK PEPPER, GENTLY PRESSING IT IN. HEAT SKILLET UNTIL VERY HOT! ADD THE OLIVE OILE AND SEAR STEAKS FOR 2 MINUTES ON EACH SIDE OR UNTIL DESIRED DONENESS IS REACHED. SERVE ON BRAISED ROOT VEGETABLES, PARMESAN ORZO, AND FRESH LEMON.
