MONEY TUESDAY - Stewart Welch joined us with advice on Charity Swindlers- Don't You Be a Victim! He says, unfortunately, the bulk of the money donated to charities is going to the organizers and, in many cases, to the actual fund raisers…those annoying people who man the phone lines and call you in the middle of dinner! Alabamians have a long history of generous giving within our communities. So how do you make certain that the charities that solicit your donations are worthy? An old college acquaintance and prominent Mobile, Alabama attorney, Marion Quina, Jr., recently wrote me about the importance of doing due-diligence on a charity before you donate. He happily reported that a charity where he is a board member, Bay Area Food Bank, received the highest rating by www.CharityNavigator.org. Marion got me thinking about how folks might quickly check out charities before giving away their hard-earned money so I called Kate Nielsen, president of the Community Foundation of Greater Birmingham www.foundationbirmingham.org. Kate suggested using charity rating services like www.charitynavigator.org and www.GuideStar.org in conjunction with your local community foundation. According to Kate, experienced local community foundations have intimate knowledge of the local charities and can personally advise you of their effectiveness in meeting their philanthropic goals. Fortunately, highly experienced community foundations dot the landscape across Alabama including Birmingham, Huntsville, Mobile and Montgomery, to name a few. BETH K - Should you wash your raw chicken before you cook it? TV chefs from Martha to Julia recommend it, but food safety experts have always recommended against it. Now, a researcher at Drexel University is launching a "Don't Wash Your Chicken" campaign. Why is this so important? Salmonella and campylobacter - two common bacteria found in raw chicken - cause up to 1.9 million cases of food poisoning a year. And up to 90% of home cooks wash their chicken - believing it to be an important step in chicken prep - even though food scientists and the FDA have long recommended against it. In fact, I remember in my food science classes back in my undergrad years in the 80's being told NOT to wash meat before cooking. Washing chicken or any other meat simply spreads the bacteria to the sink and up to three feet away as the water splashes. You are probably not aware that those little bacteria in those tiny sprays of water are contaminating your kitchen. You can see or smell them. But everything they touch is potentially contaminated.
- Keep raw meat properly refrigerated. Refrigerating won't kill bacteria but it can stop the spread of bacteria. Keep a thermometer in your refrigerator and adjust the temperature as necessary.
- Cook Chicken Thoroughly. It is the cooking that kills the bacteria. So use a meat thermometer to make sure chicken is cooked to an internal temperature of 165 degrees Fahrenheit.
- Don't Cross Contaminate. Wash hands, utensils, and surfaces that have come into contact with raw meat with hot soapy water.
- Boil Marinades. Some people think that acids like vinegar and lime or lemon juice kill bacteria. They don't. So if you marinate your chicken, either toss out the marinate or boil it for several minutes to kill the bacteria if you want to put it on the cooked meat.
