Shrimp Fried Rice

Shrimp Fried Rice
makes 4 servings

2 Tbsp veg oil, divided
2 lightly beaten eggs
1 small yellow onion, chopped
1 medium zucchini, chopped
2 medium carrots, chopped
2 large garlic cloves, pressed
3 scallions, sliced
1 lb {21-25 count} fresh Alabama Gulf shrimp, peeled & deveined
4 cups cold cooked rice
1/2 cup soy sauce
1/2 tsp crushed red pepper

heat 2 tsp oil in a large non-stick skillet over high heat; pour eggs into skillet
cook 30 seconds on each side or until set & the eggs begin to brown
{do not scramble the eggs}
slide the egg from the skillet onto a cutting board & chop
place the skillet back over the heat & add the remaining oil
{give it a minute or two to get super hot}

 saute the onion, zucchini & carrots 3 to 4 minutes
add the garlic, scallions & shrimp & cook 1 to 2 minutes
add the rice & soy sauce… cook 2 to 3 more minutes or until thoroughly heated
stir in the egg & crushed red pepper
