Kairos Chicken Marsala

6 pieces boneless chicken tenderloins

1 piece uncooked bacon, diced

1 tablespoon diced sweet white onions

1 can beef broth or stock (2 cups)

2 cups sliced mushrooms (a variety is better)

1 cup marsala wine

1 tablespoon heavy cream or half 'n half

1 clove garlic, minced

2 tablespoons extra virgin olive oil

Fresh cracked white pepper

Fresh cracked black pepper

Sea salt

1 cup flour


Preheat sauté pan and add olive oil. Add bacon and onions. Cook until golden brown. Add flour to a mixing bowl, and dip Chicken Tenderloins in flour and shake off any excess flour. Add chicken tenderloins to the sauté pan and sear on one side until golden brown. Turn chicken over and add Mushrooms and garlic. Cook for several minutes, giving the mushrooms time to get a nice sear on them. Deglaze the pan with marsala wine and beef broth. Add heavy cream. If the sauce seems too thick, add a little water. Simmer over medium heat until chicken is firm. Add salt and pepper to taste. Serve with potatoes or pasta.
