Trent Bissell of Whole Foods' Herb Marinated Shrimp Salad with Heirloom Tomatoes and Alabama Peaches
1 pound 41/40 shrimp peeled and deveined
1 grapefruit juiced
2 lemons juiced
3 limes juiced
¼ cup mixed herbs (dill, thyme, oregano, basil)
1 small shallot julienned
1 clove garlic minced
Mix all the ingredients together, reserve about a tablespoon for the salad, and pour over shrimp and let marinate overnight!
1 pound marinated shrimp
1 peach diced
2 heirloom tomatoes diced
1 ear of corn with kernels removed
1 avocado diced
Take shrimp and make sure the they are cooked through from the marinade. Once sure mix with remaining ingredients and the extra marinade and enjoy!
