Kairos BBQ Chicken Mac

4 cups cooked elbow Macaroni
2 cups cooked, chopped chicken (I use leftover grilled chicken because it adds a lot more flavor)
1 cup of your favorite BBQ Sauce
1/2 cup Half n Half
1/2 cup Sour Cream
Splash of Half n Half
1 cup shredded Mozzarella Cheese
1 cup shredded Sharp Cheddar Cheese
1 cup Chopped Cooked Bacon
Sea Salt (to taste)
Cracked White Pepper (to taste)
1 teaspoon minced garlic
1 Chopped Fresh Cilantro
Preheat oven to 375. Spray a 9X12 casserole dish with cooking spray. Put in a splash of Half n Half and even it out into the bottom of the dish. Sprinkle in garlic, and a dash of salt & white pepper.
In a mixing bowl combine Sour Cream, BBQ Sauce & Half n Half. Whip with a whisk until blended together. Using a spatula or big spoon fold in Macaroni, half of the cheeses, chicken, bacon, and Cilantro. Add salt and white pepper to taste.
Pour mixture evenly into the casserole dish. Cover with aluminum foil and bake for 45 minutes.
Uncover the dish and sprinkle with the remaining cheeses. Cook until cheese is golden brown. This is a quick dish that only needs a salad (or a veggie) and some bread to make it a perfect meal. You can also make it a day ahead and store in the refrigerator. Just pop it in the oven when you're ready. I hope you guys enjoy it!
