> Buttermilk Panna Cotta
> Yield: 10
>
> For Panna cottas:
>
> 2 quarts Buttermilk
> 2 quarts heavy cream
> 1 ½ cups granulated sugar
> 1 ½ tbs. unflavored gelatin
> 2 tsp. vanilla
> ¼ cup of lemon juice
>
>
> For sugar slurry:
>
> 1 cup sugar
> ¼ cup lemon juice
> 1 tbs water
> Heat in small sauce pan until sugar is dissolved
>
> For panna cottas:
>
> 1: Lightly spray the inside or ramekins with pan spray
>
> 2: Bring to a simmer  heavy cream, sugar, vanilla, and lemon juice
>
> 3:  Bloom gelatin in large bowl with half of the cold buttermilk while
> heavy cream comes to simmer (just whisk the buttermilk in slowly to
> the gelatin, not vice versa!)
>
> 4: Slowly whisk the hot heavy cream mixture into buttermilk and
> gelatin
>
> 5: Whisk in the rest of the buttermilk
>
> 6: Add a small amount (just enough to cover the bottom of the ramekin)
> of sugar and lemon juice slurry to the ramekins
>
> 7: Add panna cotta mixture to ramekins
>
> 8: Chill overnight
